What you need
Ingredients (makes one cup, about 250 ml)
- 15 g fresh ginger rhizome, roughly a thumb-length piece, sliced into thin coins
- 300 ml water

Buy ginger that is firm, heavy for its size, with taut skin and no soft grey patches. A dry, shrivelled rhizome has already lost most of its aroma.
